CHEF VIVIEN’S CHOCOLATE TOFU MOUSSE
For an even healthier
version, lower the
calorie and fat content in
this dessert by reducing
the amount of chocolate
chip morsels in the recipe.
To boost antioxidants, gar-
nish with strawberries.
Ingredients
1 16-ounce block extra-firm tofu
1 12-ounce bag dark chocolate chip morsels
½ cup plain soy milk
¼  teaspoon pure almond extract
Toasted sliced almonds for garnish
Directions
Melt the chocolate morsels over a double boiler until smooth,
or microwave at 30-second intervals until the chocolate is soft
and smooth, stirring after each interval.
Drain tofu on paper towels. Slice into small- to medium-sized
cubes.
Place cubes in a blender and add the soy milk, almond
extract, and melted chocolate chips. Blend until well com-
bined. If it’s too thick to blend thoroughly, add a tablespoon
or so of soy milk.
Scoop into serving dishes—
or use a pastry bag to pipe
decoratively. Top with toasted
almonds and serve.
